Universal beetroot preparation

You can make many different dishes from beets. One of them is a universal preparation. Which can be eaten as caviar, as a salad with meat, and even added to borscht at the end of cooking.

To prepare it, you will need the following ingredients:
Beets – 1.5 kg
Onions – 0.5 kg
Carrots – 0.3 kg
Sweet red pepper – 0.5 kg
Tomatoes – 1 kg (or 0. l of tomato paste)
Sugar – 2.5 tbsp. l.
Salt – 1 tbsp. l. with top
Garlic – 30 g
Black ground pepper – 1 tsp.
Vinegar – 1 tbsp. l. (9%)
Oil – 150 g
In a deep saucepan with a thick bottom, heat the oil, fry the diced onion in it, add the carrots grated on a large grater. Fry all this until soft.
Add the beets grated on the same grater and simmer over low heat under the lid for 10-15 minutes.
Twist the pepper and tomatoes in a meat grinder, add salt and sugar. Simmer for 40-45 minutes, the last half hour without a lid.
At the end, add garlic, pepper, vinegar, bring to a boil and pour into hot sterilized jars. Screw on metal lids. Yield – 2 liters.
