You can't beat egg whites in an aluminum dish, because they will darken.

If the dough oversalt, it will be thin.

If you pour too much sugar into the dough, the dough will brown quickly during baking, but the middle will be raw.

Whites and cream should be cooled to 8 -10 degrees. It must be whipped before use, since the foam from them cannot stand for a long time (it settles).

You should never add products to the whipped whites, but on the contrary – they should be introduced into the products, while carefully stirring with a spatula from below up.

Brush buns, pies, and vatryushki with an egg 5-10 minutes before baking.

Small products should be baked at a higher temperature, but large products should be baked at a lower temperature, so that it's baked.

A gas oven should be preheated 10 minutes before you want to bake something, and an electric oven should be preheated 20 minutes.
