Vitamin dressing from beets, garlic and horseradish for the winter

In season, beets are a frequent guest on the table. Salads and snacks with them are tasty and healthy. After harvesting, the question arises about its sorting and storage. Part goes to the cellar, and the rest of the root crops, which are damaged or unripe, can be used for culinary purposes. You can make a dressing with horseradish and garlic from beets.
What you need for cooking
- beets — 800 g;
- carrots — 500 g;
- onions — 600 g;
- tomatoes — 600 g;
- horseradish;
- garlic — 2 heads;
- vinegar (9%) — 50 ml;
- salt — 1-2 tbsp.;
- sugar — 3-4 tbsp.;
- bay leaves;
- pepper peas;
- vegetable oil.
How to cook
Wash and peel the carrots and beets. Grate the vegetables on a coarse grater. Cut the onion into medium cubes. Combine all the vegetables and simmer for a few minutes. 5-7 minutes longer will be enough. Add salt and sugar while simmering.
Chop the tomatoes, garlic and horseradish with a blender. Add the resulting mass to the other vegetables. Now you need to continue simmering everything together for 15-20 minutes.
5 minutes before the end of cooking, add the remaining ingredients, namely: peppercorns, bay leaves. After that, the aromatic dressing can be transferred to sterilized jars. Close the lids and turn over until completely cooled. Store in a dark and cool place.
