In autumn, when the harvest is harvested, the period of fermenting cabbage and savoring it begins. Different variations of sauerkraut with cranberries, lingonberries, beets, and so on are not the limit of possibilities.
It turns out that not only white cabbage and apples can be fermented, but even eggplants.

To prepare, you will need:
- eggplants;
- carrots;
- onions;
- celery and parsley;
- 1 liter of water;
- 1 tsp. salt.
How to cook
You can adjust the amount of vegetables to your taste. Before cooking eggplant, you need to boil it.
To do this, bring the water to a boil, add salt and cook the clean vegetables in it for 5-7 minutes.
Cut the onion into cubes, fry in oil. Wash, peel, grate the carrots and fry together with the onions.
Cool the boiled eggplants, cut lengthwise and fill with fried carrots and onions.
To prepare the brine, stir a teaspoon of salt in 1 liter of water.
Put the eggplants in a bowl or saucepan, add chopped celery and parsley, pour hot brine on top and leave the vegetables under pressure for 10 hours.
When ready, drain the brine, transfer the eggplants to a jar and store in the refrigerator.
