American scientists have learned which products are best not to use tomatoes. The combination of tomatoes with rich iron ingredients can destroy the anticancer properties of these vegetables, experts told. At the University of Ohio (USA), researchers conducted research with the participation of seven volunteers, offering them cocktails made of tomatoes with and without iron. The results showed a low level of lycopeine known for anticancer properties, in the blood and digestive fluid of those participants who consumed a tomato drink that contained iron. According to the author of the work, Rachel Kopepe, that iron is able to destroy some compounds has been known for a long time, but the fact that it was harmful to such carotenoids as Lycopene became an discovery. The anticancer properties of lycopene are destroyed when a person consumes bolognese sauce, flakes enriched with iron with tomato sauce or meatball in tomato sauce. Currently, experts are definitely not able to explain what happens with the absorption of lycopene. It is expected that food with iron acts on lycopene as an oxidizer.
