Puff pastry should be baked in an oven preheated to a temperature in the range between 210-230 degrees.
The fact is that if the temperature is below 220 degrees, this will cause the fat in the dough to melt. Because of this, the dish will turn out too dry and not very layered.
In turn, excessive heat will cause the puff pastry to not bake well, harden quickly and burn.
