What to add to the batter for thin pancakes to make them openwork

Pancakes are always about comfort, gatherings with family and warmth in the kitchen. But how to make them thin and delicate, so that each hole pattern becomes a highlight?
Ingredients for openwork dough:
- flour – 250 g;
- milk – 500 ml;
- eggs – 2 pcs.;
- sugar – 1-2 tbsp. l.;
- salt – a pinch;
- oil – 2 tbsp. l.;
- boiling water – 100 ml;
- soda – 0.5 tsp. l.
Two key ingredients are important for openwork pancakes – soda and boiling water. Soda reacts with hot water, forming bubbles that create a characteristic pattern. Knead the dough gradually: first mix the eggs with sugar and salt, add milk and sifted flour. Then pour in the oil and boiling water, stirring until smooth.
To make the pancakes thin, the dough should be liquid. Heat the pan, grease it with a thin layer of oil and pour the dough with a ladle, quickly distributing it over the surface.
The finished pancakes are light, delicate and very tasty. Serve them with honey, jam or savory filling – they are suitable for any occasion!
