Recipe for tomato sauce from overripe tomatoes
Juicy and aromatic tomatoes are great as an ingredient for preparing pasta sauce.

Such a recipe involves the use of crushed, cracked and overripe fruits, which are not suitable for preservation.
For 8 medium tomatoes, we take a quarter of a glass of olive oil and 3 cloves of garlic. Cut half of the onion into thin slices or cubes, chop 2 sprigs of fresh thyme and 1 small bunch of fresh basil.
Cut off the cracked or moldy parts of the tomatoes and cut them into large pieces.
Heat the oil in a saucepan. over medium heat and fry onions and garlic. After 5-7 minutes, add tomatoes and about half of the juice, greens, and bring to a boil.
We continue to cook over low heat without a lid until the sauce thickens, approximately 20-30 minutes.

Add 1 tsp. salt and pepper to taste. The finished sauce is served immediately on the table, it can be stored in the refrigerator for several days, and in the freezer for up to 2 months.
