What to do with overgrown cucumbers

It is nice to harvest cucumbers. This means that everything worked out and the season is successful. Perhaps so much so that some specimens have become overgrown and have nowhere to go. Do not rush to leave such cucumbers for seeds or throw them away.
Where and how to use them
In cooking, there are several options for what you can do with them. Let's remember that even an ordinary salad will be tasty and juicy with such cucumbers. You just need to clean the seeds. And then according to the standard scheme: tomatoes, pickled onions and oil.
You can make a blank for brine. It is simple to prepare. Peel the overgrown cucumbers and twist them in a meat grinder. Do not mince, let there be tangible pieces. Use a large grate.
The cucumber mass should be salted, brought to a boil and cooked for 30 minutes. Then add vinegar and distribute in pasteurized jars. For 2 kg of cucumbers, take 7 tbsp. vinegar (9%).
You can prepare another version of this preparation. It contains: 2 kg of cucumbers, 300 g of onions, 300 g of carrots, 1 head of garlic, 3 tbsp. sugar, 2 tbsp. salt, 7 tbsp. vinegar (9%), 1 tbsp. of vegetable oil.
Grind all the vegetables. Cut cucumbers and onions into cubes, grate carrots, pass garlic through a press or grate. Add sugar, salt, vinegar and oil to the vegetable mass. Put on fire, bring to a boil and boil for 5-10 minutes. Spread into sterilized jars and roll up with lids. It will be delicious in winter!
