Which vegetables can ripen after harvest?

Each of us has definitely seen a windowsill strewn with tomatoes. This vegetable can ripen even if it is picked green. In fact, there are many more such vegetables. So what does ripening depend on?
Details
For vegetables to ripen, sunlight alone is not enough. It is necessary to maintain a humidity level of about 75%, and an air temperature of 20-23 degrees Celsius.
You can speed up the process by increasing the temperature to +25, but the fruits may become watery and the skin soft.
In addition, vegetables that are harvested only in dry weather can ripen without problems. These should be undamaged vegetables, without signs of spoilage or disease.
Which fruits will ripen on their own:
- Tomatoes. This is a real ripening champion. Tomatoes are picked when there is a threat of cold weather. The ideal temperature for ripening tomatoes is 20 degrees Celsius.
- Pepper. Few people know, but this vegetable can be eaten unripe. A vegetable placed in wooden boxes in one layer, at a temperature of 10-12 degrees Celsius, ripens well. After 2-4 weeks, the vegetable will be ripe and juicy.
- Melon, if you pick it slightly yellowish. Be sure to leave a tail, at least 5 cm long. Melon will ripen in a warm, dark place with a minimum level of humidity.
- Potatoes. Of course, you can't eat it green, but if you place the crop in a dry, dark place, the potatoes will fully ripen in 2-3 weeks.
May your harvest be generous at any time of harvest!
