It depends both on the quality of the product and on the chemical reaction.
Why does garlic change in color
The reason for this is the substances allicin and allicinase.
As long as the cloves of garlic are intact, no reaction occurs. But if you grind or cut them, a chemical reaction begins, as a result of which allicin is formed.
If your twist recipe contains vinegar, then in the reaction with allicin, it causes the formation of new substances – polypyrroles.
They are already repainting the cloves in green or blue colors.
At the same time, garlic and the entire preparation can be safely eaten.
