Scientists have revealed the secret of chocolate's taste. Researchers have described the physical process that occurs in your mouth when you eat a piece of this dessert. It is this melting effect that appeals to many people.
The research team at the University of Leeds hopes that their work will lead to a new generation of chocolates that have the same taste and texture, but are healthier.
Almost immediately after the chocolate hits the tongue, the cocoa solids are released and become important from a sensory perspective. Therefore, the fat that is deeper in the chocolate plays a fairly limited role and can be reduced without affecting the taste.
“Whether the chocolate is 5% fat or 50% fat, it will still provide the same melting in the mouth,” the scientists explained. — “We show that the fat has to be on the outer layer of the chocolate, that is the most important.” Another interesting thing is that when the chocolate hits the tongue, it releases a fatty film that coats the tongue and other surfaces in the mouth. It is this fatty film that makes the dessert feel smooth.
