Many people wash eggs after purchase to get rid of dirt on their shells. But representatives of the Spanish Consumers and Users Organization do not recommend doing so. The fact is that water can only harm: bacteria can penetrate the inside of the egg through it.
The egg shell, according to Luis Riera, head of the food safety company SAIA, has a porous structure. There are microorganisms on this shell. When you wash an egg with water, bacteria can get inside under pressure. Therefore, washing eggs with water is not only useless, but can also be dangerous.
It is also not recommended to break eggs against the edge of the container in which you will beat them. This is due to the fact that in this case, dirt from the shell can easily get into the inside of the egg. For the same reason, it is also not worth using the egg shell to separate the yolk from the white.
