How to cook
First of all, pay attention to the choice of zucchini. Of course, younger ones taste best. Choose fruits without defects. Cut the zucchini into 4 parts as follows. First, cut across, and then each piece in half and lengthwise. The zucchini should be poured with boiling water with salt. Then remove and cool. You can put it in a colander to drain excess water. At the last stage of processing, you need to remove the core from each zucchini part.
Prepare a thick sauce for the dish. For it, you need to take 1 tbsp. butter and 1 full tbsp. flour. Put on the fire, fry and gradually add milk or water, stirring constantly.
You need to achieve a uniform consistency without lumps. The sauce is cooked on the fire until thickened. As soon as it begins to separate from the pan, you can consider it ready to send to cool. Next, add grated cheese, salt, 2 yolks to the cooled sauce, and beat 2 egg whites until foamy and also add to the mass.

Bake in the oven until a light crust appears and the filling rises. You can serve the ready-made tender zucchini with cheese soufflé. Delicious!
